酸枣仁蛋白酶解产物功能特性及抗疲劳活性研究 被引量:11

摘要 以酸枣仁蛋白(semen ziziphi spinosae protein,SZP)为原料,对其进行酶解处理,研究酸枣仁蛋白酶解产物(semen ziziphi spinosae protein hydrolysates,SZPHs)的功能特性和抗疲劳活性。以水解度、蛋白回收率、抗疲劳活性为指标,对蛋白酶进行筛选,确定碱性蛋白酶为最适蛋白酶;功能特性研究表明,酸枣仁蛋白酶解产物具有极其易溶的溶解性,同时其持油性、起泡性、乳化性、乳化稳定性相比于酸枣仁蛋白具有明显提升;抗疲劳活性研究表明,酸枣仁蛋白酶解产物可延长小鼠负重游泳时间,增强体内乳酸脱氢酶、超氧化物歧化酶、谷胱甘肽过氧化物酶、Na+-K+-三磷酸腺苷酶活性和糖原储备,减少体内血乳酸、血清尿素氮和丙二醛的产生和积累。研究结果表明,相比于酸枣仁蛋白,酸枣仁蛋白酶解产物具有较好的功能特性和抗疲劳活性,可作为一种蛋白质来源应用到食品加工中。 Semen ziziphi spinosae protein(SZP)was used as raw material for enzymolysis treatment to study the functional characteristics and anti-fatigue activity of semen ziziphi spinosae protein hydrolysates(SZPHs).Based on the indexes of hydrolysis degree,protein recovery rate and anti fatigue activity,the protease was screened and the alkaline protease was determined as the best protease.The results showed that the SZPHs was very soluble,and its oil holding,foaming,emulsifying and emulsifying stability were significantly improved compared with SZP.The results showed that the SZPHs could prolong the swimming time,enhance the activities of lactate dehydrogenase,superoxide dismutase,glutathione peroxidase,Na+-K+-adenosine triphosphate protease(Na+-K+-ATPase)activity and glycogen reserves,reducing blood lactic acid,blood urea nitrogen and malondialdehyde production and accumulation.The results showed that the SZPHs had better functional properties and anti-fatigue activity compared with SZP,and could be used as a protein source in food processing.
