摘要
鲜食大豆营养丰富、口味尤佳,但由于含水量高、易腐易损,导致其储运成本较高,综合利用价值较低。本研究借鉴甘薯颗粒全粉的回填制备方法,开发出鲜食大豆颗粒全粉的加工工艺,并对获得的颗粒全粉进行品质分析。结果表明,80目以上的颗粒全粉粉质细腻、复水性好,基本保持了鲜食大豆的口感和风味,已能满足深加工的需要;回填比例在1∶1.5~2之间的分散效果较佳,挤压粒径在20~40目之间的生产效率较好。相比于新鲜籽粒,颗粒全粉(>80目)的主要营养物质在回填加工过程中损失较小,其中蛋白质、脂肪和淀粉含量的差异不显著,而叶绿素也能保留其原有质量分数的60%。鲜食大豆新鲜籽粒作为原料先加工成全粉,再通过深加工制成各式各样的下游产品,能够提升鲜食大豆的经济价值,促进鲜食大豆产业的可持续性发展。
Vegetable soybean has rich nutrition and good taste.However,it is with high storage and transportation cost and low comprehensive utilization value due to its high water content and easy rotting.In this study,the processing technology of the granule powder of vegetable soybean was developed by using the backfilling method of the granule powder of sweet potato for reference,and the quality of the granule powder was also analyzed.The results indicated that the powder with 80 meshes or more was fine in quality and good in rehydration,which basically kept the taste and flavor of fresh vegetable soybean,and could meet the needs of deep processing.The dispersion effect of backfilling ratio between 1∶1.5 and 1∶2 was better,and the production efficiency of extrusion particle size between 20 and 40 meshes was better.Compared with the fresh vegetable soybean,the main nutrients in the granule powder(>80 meshes)lost less in the process of backfilling,in which the difference of protein,fat or starch content was not significant,and chlorophyll also retained 60%of its original content.Vegetable soybean can be processed into granule powder and then deep processed into a variety of downstream products,which can enhance the economic value of vegetable soybean and promote the sustainable development of vegetable soybean industry.
