混合教学法在餐饮实训课中的设计与应用

摘要 为满足培养中职酒店管理专业人才的餐饮实训技能的学习需求,运用混合式教学法,将网上资源、信息工具、网络学习平台和具体课程有机融合,灵活运用线上、线下教学方式,合理巧妙的设计和重构课前预习、课中探究和课后巩固来拓展教学过程。通过建设云课堂、智慧课堂,激发学生自我探究意识,有效提升了授课质量和效率,实现以能力为本位的培养目标。实践中存在着教学条件与需求不匹配,资源投入不够、互动性不足等问题,因此教学条件亟需改善,需要加大应用推广力度并建立多元化评价体系。 In order to meet the study need of hotel management professional talents’ cultivation of catering training skills, the mixed teaching method is used to integrate online resources, information tools, online learning platform and specific course. Carry out flexible use of online and offline teaching methods, reasonable and smart design and refactoring the whole teaching process: preview before class, exploration during the class and consolidation after class. By construction of cloud classroom and the wisdom classroom, students’ self-exploration consciousness is stimulated;teaching quality and efficiency improves effectively;ability-oriented training objectives have been achieved. In practice, there are some problems such as mismatching teaching conditions and demand, insufficient resource input and inadequate interactivity, so it is needed to improve teaching conditions, strengthen application and promotion, and establish a diversified evaluation system.
