摘要 采用旋转黏度计对重庆涪陵醪糟进行了黏度特性测试,找出了最佳的测试条件,对5种醪糟进行了聚类分析,并对掺水醪糟的黏度进行了研究。结果表明:选取1号转子,转速30 r/min,醪糟与水熬制的质量比为1∶3,测试温度范围33~45℃为最佳测试条件。对5种醪糟的黏度特性分析结果表明,不同的醪糟样品黏度值有差异,其中样品1的黏度值最小,为61 mPa·s,样品5的黏度值最大,为321 mPa·s;聚类分析结果表明,根据欧式距离可以将5种醪糟样品分为3类,能够利用黏度值对醪糟进行品质差异的分类。对掺水醪糟黏度测定结果表明,不同掺水量其黏度有差异,可以利用黏度特性快速判断醪糟是否掺水。该研究对醪糟品质的鉴别提供了帮助,也为其品质的快速分析提供了研究基础。 The viscosity characteristics of Chongqing Fuling fermented glutinous rice are tested by rotating viscometer,the optimum test conditions are found,clustering analysis of five kinds of fermented glutinous rice is made and the viscosity of watered fermented glutinous rice is studied.The results show that the best test conditions are choosing No.1 rotor,the rotating speed of 30 r/min,the mass ratio of fermented glutinous rice and water of 1∶3,the test temperature of 33~45℃.The viscosity characteristics analysis results of five kinds of fermented glutinous rice show that there are differences in the viscosity of different fermented glutinous rice samples,among which,the viscosity of sample 1 is the lowest(61 mPa·s),and that of sample 5 is the highest(321 mPa·s).The clustering analysis results show that five kinds of fermented glutinous rice could be divided into three categories according to Euclidean distance,using viscosity value to discriminate the quality difference is feasible.The viscosity testing results of watered fermented glutinous rice show that the viscosity is different with different water content,so the viscosity characteristics can be used to quickly judge whether fermented glutinous rice are mixed with water or not.This study has provided help for the identification of quality of fermented glutinous rice,and it has also provided research foundation for the quick analysis of quality of fermented glutinous rice.
