摘要
经过近50年的发展,我国茶资源综合利用产业取得诸多进步,天然活性成分的发现、分离和应用得到质的飞跃,现已基本形成以茶多酚、茶氨酸、茶皂素、茶多糖、咖啡碱等活性物质为主导的多元化产品,应用于如食品、天然药物、保健品、食品添加剂等领域,这些化合物主要来源于茶树的根、茎、花、叶和果。文章综述了近50年来我国茶资源的综合利用成果及其应用现状,介绍了茶的四大食品新原料(新资源食品),使更多人了解涉茶科技成果的产业化现状,积极参与成果转化,抓住契机,与我国大健康目标同步前进。
In recent half century,tea deep-processing industry has greatly developed.Natural active compounds were found,isolated and applied.Now,diversified products,such as foods,natural medicines,health care products and food additives have been developed with active substances such as tea polyphenols,amino acids,saponin,polysaccharides as well as caffeine.Most of these natural active compounds are derived from roots,stems,flowers,leaves and fruits.This review summarized the recent research achievements and utilizations of tea resources in three areas of China,introduced four new tea materials,recent achievements and transformation situation and hope more and more people to participate in the tea industrial activity for human health.
