高品质抹茶的原料绿茶关键栽培技术研究 被引量:7

摘要 以抹茶适制茶树品种‘薮北’(Camellia sinensis(L.)O.Ktze)为试材,以叶绿素、茶多酚、咖啡因、氨基酸等成分含量为指标,研究原料绿茶的最佳覆盖遮阴时间和施肥种类等主要栽培技术。结果表明:不同种类的肥料对‘薮北’的叶绿素、咖啡碱、茶多酚含量的影响较小,但对其氨基酸含量的影响较大。其中施有机肥的茶叶氨基酸含量最高为8.70%,且与施其他种类肥料的鲜叶氨基酸含量相比具有显著性差异。说明高氮肥能显著提高茶叶的氨基酸含量,在原料绿茶栽培时施高氮肥有利于提高抹茶的品质。覆盖遮阴时间对茶叶品质影响较大,21 d为‘薮北’的最佳遮阴时间,经过21 d覆盖栽培的‘薮北’鲜叶中叶绿素和氨基酸含量达到最高,分别为0.058 g/L和7.61%。 The optimal cover time and fertilization type were studied by taking the tea species of‘Yabukita’(Camellia sinensis(L.)O.Ktze)as the test material and the content of chlorophyll,tea polyphenols,caffeine and amino acids as the indexes.The results showed that the shading time had a great influence on the quality of tea,and 21 days was the best shading time in‘Yabukita’.The chlorophyll and amino acid contents in‘Yabukita’were the highest in 21 days,which were 0.058 g/L and 7.61%respectively.The effects of different fertilizers on the contents of chlorophyll,caffeine and tea polyphenols in‘Yabukita’were small,but the effects on the contents of amino acids were large.The highest content of amino acid in organic fertilizer was 8.70%,which was significantly different from that in other fertilizers.It indicates that high nitrogen fertilizer can significantly increase the amino acid content of tea.Therefore,applying high nitrogen fertilizer in the cultivation of‘Yabukita’is conducive to improving the quality of matcha.
