摘要
随着经济发展和人们生活水平的提高,食物已不再只是满足饱腹感,人们追求更加营养、安全、健康、时尚、方便的食品。因此在功能性休闲肉制品中,例如低盐、低脂、富含膳食纤维、强化营养、生物发酵等类型的产品呈现良好的市场发展前景,其技术研究和产品开发也越来越受到关注。文章对在此领域的进展进行了概要综述。
With the economic development and the improvement of people’s living standards,food is no longer to satisfy the sense of satiety.People are more in pursuit of nutrition,safety,health care,and even further to meet the fashion,instant and convenient development.Therefore,functional leisure meat products,such as low salt,low fat,rich in dietary fiber,enhanced nutrition,biological fermentation and other products show a good market development prospect.Its technology research and product development are also more and more concerned.This paper summarizes the progress in this field.
