PBL教学模式在“食品加工高新技术”课程实验冷冻干燥技术教学中的应用与实践

摘要 “基于问题、以学生为中心”的PBL教学模式不仅能有效激发学生的学习兴趣,而且能够培养学生独立分析解决问题的工程实践能力。在工程认证教育背景下,“食品加工高新技术”课程实验冷冻干燥技术采用了PBL教学模式。研究对象选取常熟理工学院食品科学与工程专业141和142班本科学生共60人,食品科学与工程专业141班为实验组(30人),142班为对照组(30人),对照组接受传统实验教学模式,实验组接受PBL教学模式,通过实验成绩分析及问卷调查结果进行教学效果评价。结果发现,PBL教学模式不仅显著能够提高学生对基础知识的掌握能力、自学能力,更能够提高主动思考、发现问题、分析问题、解决问题、沟通及团队协作能力,课堂气氛显著改善,取得了良好的实验教学效果,PBL教学法值得进一步推广应用。 PBL teaching mode based on“question-based,student-centered”can effectively stimulate students'interest in learning and cultivate students'engineering practice ability of independent analysis and problem solving.Under the background of engineering certification education,the PBL teaching mode was adopted in the“freeze drying technology”experiment of the course of new technology of food processing.The research subjects(60 undergraduate students)were selected from class 141 and 142 of food science and engineering specialty in our school.Thirty students from class 141 received the PBL teaching mode were experimental group and thirty students from class 142 received traditional experimental teaching were control group.Teaching results were evaluated through experimental score analysis and questionnaire survey results.The results showed that the PBL teaching mode could significantly improve the students'ability to master the basic knowledge and self-learning ability and improve the ability of active thinking,problem finding,analyzing problems,solving problems,communication and teamwork.The classroom atmosphere significantly improved.Good experimental teaching results were achieved.The PBL teaching method deserves further promotion and application.
