摘要
冷泡茶作为一种新型的茶饮,深受年轻人的追捧,它既保留了传统名优茶的特色,还兼顾快消食品的便捷特性。文章综述了国内外冷泡茶研究进展,包括冷泡茶的特点,加工方法,冲泡方法与风味品质等相关研究,探讨了冷泡茶发展面临的问题和发展趋势。
As a new type of tea beverage,Cold-brewing Tea is very popular among young people.It not only retains the characteristics of traditional famous tea,but also has the convenience of FMCG food.This paper reviewed the research progress of cold-brewing tea at home and abroad,including the characteristics,processing methods,brewing methods,flavor quality of Cold-brewing Tea,and discussed the problems and development trend of Cold-brewing Tea.
