摘要
本试验通过对藏猪猪肝样品进行主要营养成分以及氨基酸、矿物元素的测定,对藏猪猪肝的营养品质作出评价。结果表明,藏猪猪肝的主要营养成分是蛋白质和粗脂肪,蛋白质含量为19.75 g/100 g,总脂肪含量为4.61 g/100 g。藏猪猪肝第一限制性氨基酸为含硫氨基酸(蛋氨酸+半胱氨酸),第二限制氨基酸为缬氨酸,除以上氨基酸外,其余氨基酸评分均大于100。藏猪猪肝中的矿物质元素较为丰富,尤其是铁、锌、钙元素含量较高,其中铁元素含量高达179.72 mg/kg,汞、铅、镉和砷未检出,因此藏猪猪肝是一种营养价值较高的绿色食品。
The nutritional quality of Tibetan pig liver was evaluated by determining the main nutrient components,amino acids and mineral elements in Tibetan pig liver samples.The results showed that,the main nutritional components of Tibetan pig liver were protein and crude fat,which accounted for 19.75 g/100 g and 4.61 g/100 g respectively.The first limiting amino acid of Tibetan pig liver was sulfur-containing amino acid(methionine+cysteine),and the second limiting amino acid was valine.Except for the above amino acids,all the other amino acids scores were higher than 100.Tibetan pig liver was rich in mineral elements,especially iron,zinc and calcium,and the content of iron was up to 179.72 mg/kg,Mercury,lead,cadmium and arsenic were not detected.Tibetan pig liver is a kind of green food with high nutritional value.
