摘要
该文从学校管理责任落实不到位、食堂设施设备不齐全、流程布局不合理、部分食堂原辅材料及成品检验不合格、学校饮用水问题等方面分析了学校食品安全管理中存在的风险,并提出预警中引入HACCP体系分析方法、量化分级管理、精细化管理加强学校食品安全预警及管理方法。
This article analyzes the risks in school food safety management from the aspects of inadequate implementation of school management responsibilities,incomplete canteen facilities and equipment,unreasonable process layout,unqualified inspection of raw and auxiliary materials and finished products in some canteens,and drinking water problems in schools.It is proposed to introduce HACCP system analysis method,quantitative and hierarchical management,and refined management in early warning to strengthen school food safety early warning and management methods.
