红枣富硒饲料对灵山土鸡肉、蛋中硒含量和风味的影响 被引量:6

Effects of selenium rich feed on selenium content and flavor in chicken and egg of Lingshan native chickens

摘要 为提高鸡肉、蛋中硒含量和风味,本试验在灵山土鸡日粮中使用自主配制的红枣富硒饲料,分三个试验组和一个对照组,有机酵母硒添加量设三个不同的梯度,分别是试验Ⅰ组0.3 mg/kg、试验Ⅱ组0.5 mg/kg、试验Ⅲ组0.7 mg/kg,肌肉风味和硒含量测定的试验期为67 d,蛋风味和蛋中硒含量测定的试验期为1个月。试验结果表明:使用自主配制的红枣富硒饲料,均能提高肉、蛋中硒含量,改善肉和蛋的风味。肌肉硒含量中,试验Ⅲ组最高,和试验Ⅰ、Ⅱ组比较分别提高了21.43%和13.33%,差异极显著(P<0.01);试验Ⅰ、Ⅱ、Ⅲ组和对照组比较分别提高了110.53%、125.56%和155.64%,差异极显著(P<0.01);试验Ⅱ组和试验Ⅰ组比较提高了7.14%,差异显著(P<0.05)。三个试验组鸡蛋硒的含量均在0.41~0.44 mg/kg,蛋中硒含量约是对照组的2倍,说明有机酵母硒比无机硒能更好地提高鸡蛋中的硒含量,但各试验组之间硒含量变化幅度不大。 In order to improve the flavor of chicken and eggs and increase the selenium content in muscle,the self-made jujube selenium-rich diet was used in the diet of Lingshan native chickens.The diet was divided into three experimental groups and a control group.The selenium content of organic yeast was set up with three different gradients:0.3 mg/kg in group I,0.5 mg/kg in group II and 0.7 mg/kg in group III.The test period of muscle flavor and selenium content was 67 days,and that of egg flavor and selenium content was 1 month.The results showed that the selenium content in meat and eggs could be increased and the flavor of meat and eggs could be improved by using selenium-rich jujube feed prepared by ourselves.Among the selenium content in muscle of group III was the highest,which increased by 21.43%and 13.33%respectively compared with group I and group II(P<0.01),while groups I,II,III was increased by 110.53%,125.56%and 155.64%respectively compared with the group I(P<0.01).Compared with group I,group II was increased by 7.14%(P<0.05).The selenium content in eggs of the three experimental groups was 0.41~0.44 mg/kg,and the selenium content in eggs was about twice that of the control group.This indicated that organic yeast selenium could improve the selenium content in eggs better than inorganic selenium,but the three experimental groups did not change much.
