摘要
脐橙皮含有大量的膳食纤维,可作为制作膳食纤维食品的优质原料.充分利用废弃的脐橙皮,能够避免造成大量资源浪费和环境污染,提升这类资源的附加值.阐述膳食纤维的分类及化学组成、膳食纤维的提取与改性方法、膳食纤维的作用及应用,为制备高质量脐橙皮膳食纤维和功能性的挖掘提供一定理论依据.
Navel orange peel contains a large amount of dietary fiber,which can be used as a high-quality raw material for making dietary fiber food.In order to make full use of the disused navel orange peel,it could avoid a lot of waste of resources and environmental pollution and increase the added value of such resources.This article described the classification and chemical composition of dietary fiber,the extraction and modification methods of dietary fiber,and the role and application of dietary fiber.These research results could provide a theoretical basis for the production of high-quality navel orange peel dietary fiber and functional mining.
