摘要 研究了二倍体马铃薯淀粉的提取工艺,通过单因素和正交实验探究了乙醇终浓度、鲜薯重量及洗涤次数对二倍体马铃薯淀粉提取率的影响.结果表明,影响二倍体马铃薯淀粉提取率的三个重要因素为乙醇终浓度、洗涤次数和鲜薯重量.其中,乙醇终浓度对二倍体马铃薯淀粉提取率影响极显著(P<0.01).二倍体马铃薯淀粉提取的最佳条件组合为:乙醇终浓度30%,洗涤次数3次,鲜薯重50 g.与传统水提法相比,乙醇沉淀法能够提高二倍体马铃薯淀粉的提取效率,缩短大批量淀粉提取工作时间,为今后二倍体马铃薯淀粉生产工艺的研究提供了理论基础. The extraction process of diploid potato starch was studied,and the effects of ethanol final concentration,fresh potato weight and washing times on the extraction rate of diploid potato starch were investigated by single factor analysis and orthogonal experiment.The results showed that the three important factors affecting the extraction rate of diploid potato starch were the final concentration of ethanol,washing times and weight of fresh potato.Among them,the ethanol final concentration had a significant effect on the extraction rate of diploid potato starch(P<0.01).The optimal combination of conditions for the extraction of diploid potato starch:the final concentration of ethanol was 30%;The washing times are 3 times;Fresh potatoes weigh 50 grams.Compared with traditional water extraction method,ethanol precipitation method can improve the extraction efficiency of diploid potato starch and shorten the extraction time of large quantities of starch,which provides a certain theoretical basis for the future research on the production process of diploid potato starch.
