优质强筋冬小麦石优20号品质稳定性分析 被引量:2

摘要 小麦品质稳定是品种合理区域布局和安全生产的重要保证。2013~2018年连续6 a在河北省正定县、赵县、无极县、辛集市和固安县5个县(市),每年每县(市)选择3个点,每点抽取优质强筋冬小麦石优20号生产上的子粒样品10 kg,对子粒蛋白质含量以及面团流变学特性粉质参数和拉伸参数等重要品质指标进行了测定,并分析了其不同年际、不同区域间的稳定性。结果表明:石优20号子粒蛋白质品质以及面团流变学特性粉质参数和拉伸参数等在不同年际和不同区域间稳定性均较好;且所收集子粒样品的面团稳定时间均在7 min以上,达到了二等优质小麦品质标准(GB/T 17892—1999)。国审优质强筋冬小麦石优20号品质稳定,目前已成为河北省优质小麦发展的主推品种之一。 The quality stability is an important guarantee for rational regional distribution and safe production of wheat.We analyzed the quality of Shiyou No.20 samples from Zhengding,Zhaoxian,Wuji,Xinji and Gu’an of Hebei Province in 2013-2018.10 kg seeds were selected for one sample and 3 samples were selected for each county every year.The content of protein,the rheological properties of dough,the farinograph parameters and extensograph parameter were analyzed.The stability among different years and regions was also analyzed.The results showed that Shiyou No.20 had good stability in protein quality indexes such as farinograph parameters and extensograph parameters,and the quality was also stable in different years and regions.The dough stability time of all samples was above 7 min,which met the quality standard of second-class quality wheat.Shiyou No.20 approved by the nation showed stable in quality characteristics,and has become one of the main varieties of high quality wheat in Hebei Province.
