摘要
乳酸菌是一种极其重要的益生菌,能够很好地调节改善人体肠道菌群,而乳酸菌生物膜的存在可以帮助机体抑制病原菌的生长,帮助乳酸菌抵御外界不良环境的影响,从而使乳酸菌益生功能得到更好地发挥。本文介绍了乳酸菌生物膜的形成机理,并对葡萄糖、金属离子、pH以及食品添加剂对乳酸菌生物膜形成的影响作一综述。
Lactic acid bacteria is an extremely important probiotic,which can regulate and improve human intestinal flora.The presence of lactic acid bacteria biofilm can help the body to inhibit the growth of pathogenic bacteria,help the lactic acid bacteria to resist the adverse effects of external environment,and thus make the lactic acid bacteria probiotic function get better played.This paper introduces the for mation mechanism of lactic acid bacteria biofilm,and reviews the effects of glucose,metal ions,pH and food additives on the formation of lactic acid bacteria biofilm.
