摘要
类黄酮物质是一种重要的次生代谢产物,因具有抗氧化、清除自由基等多种功效而受到广泛关注。草莓是世界七大水果之一,具有很高的营养价值和经济价值。草莓富含维生素、矿物质、膳食纤维等传统营养性成分,以及类黄酮、花青苷、绿原酸等酚酸类功能性成分。该研究从草莓类黄酮组成及含量、在生长期和贮藏期变化规律、提取及检测方法、代谢和未来前景展望等5个方面对草莓类黄酮的最新研究进行了综述,旨在为草莓功能性成分的研究及品种选育提供参考。
Flavonoids are important secondary metabolites,which have been widely concerned for their antioxidant and free radical scavenging effects.And strawberries are one of the most seven fruits in theworld,and had higher nutritional value and economic value.A large number of studies showed that strawberries were rich intraditional nutrients including vitamins,minerals,dietary fiber and other,and functional components such as flavonoids,anthocyanin,chlorogenic acid and other phenolic acids.In this study,the latest studies on flavonoids in strawberries were reviewed from five aspects,including the composition and content,the change rules during the growing and storage periods,the extraction and detection methods,metabolism and the prospect of the future of flavonoids in strawberry,in order to provide reference for the studies of the functional constituents and breeding of strawberry.
