摘要
北京灌肠是畿辅特色饮食文化代表,有着悠久的历史,很有可能与大兴罐蒸有着历史渊源。大兴罐蒸的产生与明初三晋移民有着密切的联系,以荞麦灌肠为代表的晋地饮食文化,扎根于凤河流域,三晋移民的到来,不仅充实了京畿的人口、繁荣了当地的社会经济,同时也将饮食文化传播到此。由于地区环境、饮食观念、生活质量的差异,山西荞麦灌肠、大兴罐蒸、北京灌肠三者在原料、制作工序等方面存在差异。探寻北京灌肠的历史渊源,对于畿辅饮食文化史、移民史、社会经济史等领域的研究有所裨益。
Beijing Guanchang,a sausage representative of the food culture in Beijing and its neighboring areas,has had a long history.It is likely to have a historical relationship with Daxing can steaming,which is closely related to the immigrants of Shanxi Province in the early Ming dynasty.The Shanxi food culture represented by buckwheat guanchang originated from the Fenghe River Basin.The arrival of the Shanxi immigrants not only enlarged the population of Beijing and its neighboring areas and prospered the local social economy,but also brought their food culture.Due to differences in regional environment,dietary concept,and quality of life,there are differences in raw materials and production processes between Shanxi buckwheat guanchang,Daxing can steaming,and Beijing guanchang.Exploring the historical origins of Beijing guanchang may benefit the study of the history of food culture,the immigration history and the history of social economy.
