摘要
维生素是机体维持正常生活必需的一类营养素,摄入不足或过量均可导致机体运动功能障碍,分析和评价食品中的维生素含量将对指导人群科学摄入维生素具有重要参考价值。高效液相色谱法(HPLC)是目前测定维生素最普遍的方法,具有应用范围广、灵敏度高、样品前处理简单、同时分析多种维生素的优点。本文对近年来国内食品中水溶性维生素的HPLC检测技术进行了综述,以期为相关工作提供参考。
Vitamin is the body to maintain a normal life necessary for a class of nutrients, inadequate intake or excessive can lead to body movement dysfunction, analysis and evaluation of vitamin content in food will guide the scientific intake of vitamins have an important reference value. High performance liquid chromatography(HPLC) is the most commonly used method for the determination of vitamins, which has the advantages of wide application range, high sensitivity, simple sample preparation and simple analysis of multiple vitamins. This paper reviewed the HPLC detection technology of water-soluble vitamins in domestic food in recent years, with a view to providing reference for related work.
