摘要
为了明确温度、光线对麻籽油氧化过程的影响及抗氧化剂对麻籽油的抗氧化性能,以过氧化值(POV)为考察指标,分析了在不同的温度、光照及添加不同抗氧化剂等条件下麻籽油中POV随时间的变化曲线。结果显示:随着温度的升高,麻籽油的POV逐渐增大;日光灯、紫外灯和太阳光均可促进麻籽油的氧化,其中紫外灯的促氧化作用最强;抗坏血酸、抗坏血酸+柠檬酸、抗坏血酸+花椒+草果+柠檬酸对麻籽油具有抗氧化性能,花椒+草果、花椒+草果+柠檬酸无抗氧化性能。这表明温度、光线可促进麻籽油的氧化,且光线的影响更明显;抗坏血酸对麻籽油有抗氧化性能,柠檬酸具有增效作用,而花椒+草果对麻籽油有促氧化作用,抗坏血酸可以抑制花椒+草果的促氧化作用。
Taking peroxide value(POV)as an index,the change curve of POV in hemp seed oil(Cannabis sativa L.)with time under different temperatures,light types and antioxidants addition was analyzed to determine the effects of temperature and light on the oxidative process of hemp seed oil and the antioxidation of antioxidants in hemp seed oil.POV was measured by the method of GB/T5009.37-2003,and the antioxidation of antioxidants were studied by Schaal oven-storage test.The results showed that POV increased gradually with the temperature rising.Fluorescent light,ultraviolet light and solar light could promote the oxidation of hemp seed oil,especially the prooxidation effect of ultraviolet light was the strongest.Ascorbic acid,ascorbic acid+citric acid and ascorbic acid+citric acid+Sichuan pepper(Zanthoxylum bungeanum Maxim.)+fructus tsaoko(Amomum tsaoko Crevost et Lemarie)promoted the antioxidation of hemp seed oil.Sichuan pepper+fructus tsaoko and Sichuan pepper+fructus tsaoko+citric acid had no antioxidation.Temperature and light can promote the oxidation of hemp seed oil and the effect of light is more obvious.Ascorbic acid has antioxidation in hemp seed oil and citric acid has synergistic effect.Sichuan pepper+fructus tsaoko has the effect of promoting oxidation,but ascorbic acid can inhibit its promoting oxidation.
