摘要
采用超声波辅助提取琯溪蜜柚囊衣水不溶性膳食纤维并分析其特性。通过单因素试验和正交试验,确定超声波辅助提取的最佳工艺条件:超声波功率400 W、提取时间10 min、料液比1∶30(g/mL)、NaOH质量分数4%。在此条件下水不溶性膳食纤维得率为50.9%,比传统提取法提高了19.9%。此法提取的蜜柚囊衣膳食纤维持水力为1057.6%,持油力为87.7%,膨胀力为1024.0%,水溶性为22.4%。
Insoluble dietary fiber(IDF)from Guanxi Honey Pomelo capsule layer was extracted by ultrasound-assisted method,and its properties were studied.The optimal extraction conditions were investigated by single factor experiments and orthogonal array design.The optimal conditions were 400 W of ultrasonic power,10 min of ultrasonic extraction time,1∶30(g/m L)of ratio of material to liquid,and 4%of NaOH mass concentration,respectively.Under these conditions,the extraction yield of IDF was 50.9%,an increase of 19.9%as to traditional extraction.The properties of IDF were 1057.6%water holding capacity,87.7%oil holding capacity,1024.0%swelling capacity,and 22.4%water-solubility.
