摘要
21世纪的人们更注重食材,尤其是西方饮食文化的深度融入,给餐饮行业注入了更多的活力。文章以牛排为切入点,主要从牛排的挑选技巧、牛排煎烤成熟度判定方面,探究美式牛排煎烤技法要领,以期为其他肉类菜品的制作提供参考。
In the 21st century,people pay more attention to the pursuit of good food materials,especially the deep integration of western catering culture,which has injected more vitality into the catering industry.Taking steak as the breakthrough point,this article mainly from the selection skills of steak and the determination of the maturity of steak frying,explored the basis for the main points of American steak frying techniques.
