摘要
冷库作为食品冷链物流的重要一环,是保证易腐食品在贮藏过程中品质、安全及卫生的重要技术手段,而对于温度的控制和监测是该手段的关键控制点。然而目前冷库内部空间温度场分布规律尚不明确,冷库温度场实测的离散温度数据无法形成有效标准进而直观表征温度场效果并作出评价。本文通过研究冷库温度场分布特性,创建了冷库温度场的可适用性计量评价体系,为冷库验收及期间核查提供验证方案,这对食品安全控制和冷库节能降耗都具有重要意义。
As an important part of food cold chain logistics,cold storage is an important technical means to ensure food quality,safety and hygiene,and temperature control and monitoring is the key control point of this method. However,the current temperature field distribution law of cold storage space is still unclear. The measured discrete temperature data cannot form an effective standard and intuitively evaluate the temperature field effect. By studying the distribution characteristics of cold storage temperature field,this paper establishes the applicability measurement and evaluation system of cold storage temperature field,and provides verification scheme for cold storage acceptance and period verification,which is of great significance for food safety and cold storage energy saving.
