摘要
为进一步了解大鲵的蛋白质营养与甲鱼等名贵食材的区别,比较了人工养殖大鲵与甲鱼、鲍鱼、燕窝和鱼翅的蛋白质营养价值,以氨基酸含量、氨基酸价、氨基酸指数和蛋白质效价为指标,通过分析发现,大鲵蛋白中的2种风味氨基酸(谷氨酸和甘氨酸)的含量较其余几种名贵食材高,大鲵蛋白的氨基酸价较甲鱼低,比其余几种珍贵食材高,大鲵的必需氨基酸含量、氨基酸指数、蛋白质效价较其他几种名贵食材高。
To further understand the difference of protein nutrition between the cultured giant salamander and turtle and other precious food ingredients,this article compared the protein nutritional value of the cultured salamander,soft-shelled turtle,abalone,shark's fin,and bird's nest.Content of amino acids,amino acid score(AAS),essential amino acid index(EAAI),protein efficiency ratio(PER)were taken as indexes,the results of comparison of these indexes indicated that the content of two flavor amino acids(glutamic acid and glycine)was higher in the cultured salamander than those of other precious food ingredients.The AAS of the cultured salamander was lower than that of the soft-shelled turtle,but higher than other precious food ingredients.The content of essential amino acid content,EAAI,and PER of the giant salamander are higher than the rest of the several precious food ingredients.
