摘要
本文通过实验研究了用中性蛋白酶提取牛皮中明胶的工艺方法,并对工艺参数进行了优化,减少对环境的污染,减少废液的产生,缩短工艺时间。在本研究中发现在pH=7.3、温度为40℃的环境下对牛皮进行酶解处理,酶解时间为3小时,酶用量为0.03%,提胶的温度为70℃,此条件下明胶的粘度为5.609mPa·s,产率为35.99%,为最优参数条件。表征了所制明胶的结构。酶法提取明胶工艺的生产周期短,污染小,具有很好的应用前景。
In this study, a process of extracting gelatin from bovine leather using neutral protease was studied experimentally ,and the process parameters were optimized to reduce environmental pollution, reduce waste liquid production, and shorten process time. It was found that when the enzyme was hydrolyzed at a pH of 7. 3 and a temperature of 40%, the corresponding enzymolysis time was 3 hours, the amount of enzyme used was 0. 03%, and the temperature of the extraction was 70℃. The production rate of gelatin under this condition was 35. 99% with a viscosity of 5. 609 mPa · s. In conclusion, the enzymatic preparation method has a short production cycle, little pollution, therefore, it has a very broad potential for the production process improvement and future applications.
