摘要
药膳是中国传统餐饮业的重要组成部分,对于改善顾客饮食结构、满足顾客健康养生需求具有独特价值和作用。以安徽省亳州市为例,探讨分析制约药膳餐饮企业发展的外部市场环境、企业内部产品开发和运营模式等方面存在的问题。提出加强从业人员培训、开发药膳产品、推进标准制定等对策建议。
As an important part of the traditional Chinese catering industry,medicinal meals have unique value and function in improving the food structure of customers and satisfying their health needs.Taking Bozhou city of Anhui province as an example,this paper discusses the problems existing in the external market environment,product development and operation mode,which restrict the development of medicinal catering enterprises.This paper puts forward some suggestions to strengthen the training of practitioners,develop medicinal products,and advance the formulation of standards.
