摘要
蛋白肽可以通过胶原蛋白酶解得到,其来源广泛、成本较低。胶原蛋白肽分子量小于胶原蛋白,更容易消化吸收,营养丰富,而且还有调节生理的功效,使其广泛应用在食品、医学药品和化妆品等领域,同时阐述了鱼皮胶原蛋白肽的制备、功效及应用。
Protein peptides can be obtained by collagenase hydrolysis,which has a wide range of sources and low cost. The molecular weight of collagen peptide is smaller than that of collagen,which is easier to digest and absorb,rich in nutrients,and has the function of regulating physiology,making it widely used in food,medicine and cosmetics. The preparation,efficacy and application of collagen peptide from fish skin were described in this paper.
