摘要
《食品质量安全检测新技术》主要针对食品中的营养成分、矿质元素、微生物、添加剂和有毒有害物等,系统讲解食品加工、质量保证和安全检测方面的新技术。为了激发学生的学习主动性,增强学生实践能力,培养学生的创新合作意识,在本课程教学中进行案例教学法实践。本文阐述了案例教学法实施的必要性和可行性、实施过程及取得的效果,为应用型、复合型高层次食品加工与安全人才培养奠定基础。
"New technology of food quality and safety inspection" mainly focuses on nutrition,mineral elements, microorganisms,additives and toxic and harmful substances in food,systematically explaining the new technology of food processing,quality assurance and safety inspection.In order to stimulate students' learning initiative,enhance students' practical ability,and cultivate students' consciousness of innovative cooperation,case teaching method is practiced in this course.The necessity and feasibility of case teaching implementation,the implementation process and the results obtained are analyzed,which layes a foundation for application-oriented and interdisciplinary high-level food processing and safety personnel training.
