摘要
我国现阶段乳品科技发展迅速,随之衍生一些乳品安全问题。目前,微生物引发的乳品污染问题仍然是乳品质量安全的重点和难点,生鲜乳质量安全影响着终端奶业发展,相关机构和部门都在探寻简单、便捷、廉价、高效的乳品微生物检测方法。本文就生鲜乳中微生物检测技术现状和进展进行简要综述,以供相关行业借鉴参考。
Dairy science and technology is developing rapidly at the present stage in China,then the dairy safety problems are increasingly serious,at present,the pollution problem of dairy caused by the microorganism is still the focus and difficulty in the quality and safety of dairy products,and the quality and safety of raw milk affects the development of the terminal dairy industry,related agencies and departments are exploring the methods of microbiological detection for dairy products.In this paper,the current situation and progress of microbial detection technology in raw milk were briefly reviewed,so as to provide r eference for related industries.
