摘要 "食品化学"是食品科学与工程专业大学本科生的主干课程,也是食品专业学生的考研课程。主要由理论课程和实验课程2个部分组成。为了符合国家的"卓越工程师教育培养计划"对人才的需求,培养一批创新能力强、应用能力强,适应经济社会发展的高质量工程技术人才,有必要对"食品化学"的实验课程进行改革,以达到"食品化学实验"课程的教学目的。 Food Chemistry is the main course for the students of college of food science and engineering,it is one of the important course for graduate student entrance examination.It is consisted by two parts,the theoretical courses and experimental courses.In order to adapting to the economic and social development,to meet the requirements of the national“the plan of educating and training excellent engineers”,high quality engineering studentsmust be trained to have high innovation ability and application ability.It is possible to reform the experimental course of Food Chemistry to achieve the teaching purpose of the course.
