摘要
丁酸梭菌是一种专性厌氧的革兰氏阳性芽孢杆菌,能够发酵葡萄糖、蔗糖、果糖、乳糖等碳水化合物产酸,现已被制成微生态制剂应用于饲料添加剂以及保健食品等方面。它不仅可以促进动物肠道有益菌群的增殖和发育,抑制肠道内有害菌和腐败菌的生长和繁殖,还具有耐热、耐酸、耐抗生素、提高机体免疫力和抗氧化、抗癌等功能。文章从丁酸梭菌的特征、生理功能、固态和液态发酵工艺以及在饲料添加剂、食品添加剂、临床医学、化工生产等领域的应用方面进行综述,以期为丁酸梭菌的开发与利用提供参考。
Clostridium butyrate is an obligate anaerobic Gram-positive Bacillus that ferments carbohydrates such as glucose,sucrose,fructose, and lactose to produce acid. It has been made into a microecological preparation and applied to feed additives and health food. It can not only promote the proliferation and development of beneficial intestinal flora of animals,but also inhibit the growth and reproduction of harmful and corrupt intestinal bacteria in the intestine. It also has heat resistance,acid resistance,antibiotic resistance,improving the body’s immunity and anti-oxidation anti -cancer and other functions. This paper reviews the characteristics,physiological functions,solid and liquid fermentation processes of clostridium butyrate and its applications in feed additives,food additives,clinical medicine and chemical industry,in order to pro-vide reference for the development and utilization of clostridium butyrate.
