摘要
铁包金果实中含有丰富的花青素,是一类普遍存在于植物中的天然可食用色素,花青素对人体健康有诸多益处。本论文采用晾干的铁包金果实勾儿,并用生物酶法提取铁包金果实中的花青素。本实验采用正交实验设计,研究料液比、酶用量、酶解时间、酶解温度对铁包金花青素得率的影响。实验结果表明:生物酶法提取铁包金果实花青素其最佳工艺条件为:料液比为1∶10(g∶m L),酶用量为1. 5 g,酶解时间为120 min,酶解温度为45℃,所得铁包金中花青素的得率为35. 24%。
Berchemia lineata contains abundant anthocyanins,which are a kind of natural edible pigments commonly found in plants.Anthocyanins have many benefits for human health.Anthocyanin was extracted from Berchemia lineata by biological enzyme method.The orthogonal experimental design was used to study the effect of related parameters on the yield of anthocyanin,including solid-liquid ratio,enzyme dosage,enzymolysis time and enzymolysis temperature.The results showed that the best technological conditions were as follows:the ratio of material to liquid was 1:10,the enzyme dosage was 1.5 g,the enzymolysis time was 120 min,the enzymolysis temperature was 45℃.The yield of anthocyanin in Berchemia lineata extract was 35.24%.
