摘要
选取西部地区3省具有代表性的小麦样品为对象,研究小麦发芽对降落数值的影响,对不同发芽程度、不同发芽小麦添加比例对小麦降落数值的变化规律进行了分析。结果表明,不同发芽程度小麦对降落数值有显著影响;通过控制发芽小麦的添加比例使小麦达到专用粉生产的要求,从而提高发芽小麦的利用率,并为国家标准GB 1351-2008的修订提供理论依据。
The representative wheat varieties from 3 provinces in west China was seclected to study the effect of wheat germination on falling number.Changes of falling number of wheat with different degree of germination and different proportion of sprouted kernel were studied.The results showed that the falling number has significant influence by different degree of germination.By controlling the addition ratio of germinated wheat,wheat can meet the requirements of special flour production,so as to improve the use efficiency of germinated wheat and provide theoretical basis for the revision of GB 1351-2008.
