摘要
莜面是我国中西部地区人们餐桌上常见的传统面食,美味可口且营养价值丰富。莜面制作技艺已经在内蒙古、河北、山西等多个地区申报成为地区级非物质文化遗产,为这一传统技艺的保护打下了较好的基础。民间餐桌的日常生活和地方餐饮企业的经营活动也让传统的莜面制作技艺得到了较好的传承和发展,但由于重视程度不够、传承人的稀缺、现代人的饮食习惯、种植区域政策改变等情况的存在,也让这一非物质文化遗产的传承和发展有着亟待解决的问题和困难。
Naked oats are common pasta dishes on the table in the Midwest of China.They are delicious and rich in nutritional value.The production techniques of naked oats have already been declared as regional intangible cultural heritage in many areas such as Inner Mongolia,Hebei and Shanxi.It has laid a good foundation for the protection of this traditional skill.The daily life of the folk table and the business activities of local catering enterprises have also made the traditional techniques of naked oats production better inherit and send.However,because of the scarcity of inheritors,the eating habits of modern people and the requirement of planting regional policy,the inheritance and development of this intangible cultural heritage have problems and difficulties to be solved urgently.
