摘要
莜面是内蒙古中西部人们日常饮食中常见的面食,因其营养丰富和口味独特,长期以来深受人们的青睐。通过对内蒙古乌兰察布莜面传统制作技艺的实地调查,不仅对其制作工艺流程及具体制作技术进行了完整记录,而且对莜麦在我国不同历史时期的称谓进行了说明,对莜麦在内蒙古地区种植的历史源流亦给予一定阐述。
Avena flour is a commom pasta in the diet of the people in mid-western Inner Mongolia. It is popular with thepeople because of its rich nutrition and its unique taste. Based on on-the-spot investigation of the traditional makingtechniques of Avena flour in Wulanchabu of Inner Mongolia, the author not only keeps a detailed record of its makingprocess and techniques and gives an introduction to its various names in different periods throughout the Chinese history butalso expound upon the historical origin of growing Avena plants in Inner Mongolia.
