摘要
采用3种不同培养基比较黑茶发酵过程中优势微生物的菌落形态特征,结合蛋白质谱分析该菌的部分蛋白质特性。结果表明,经过鉴定黑茶中优势微生物为冠突散囊菌(Eurotium cristatum),在3种不同固体培养基上生长差异性明显,菌丝体颜色不同,其分泌的色素差异较大,体现了该菌的耐干特性。蛋白质全谱研究发现,蛋白质全谱中鉴定特殊蛋白质达到73.34%,肽段的长度主要集中在8~22个之间,其中长度为12个的肽段最多,平均肽段长度为15.05个,蛋白质鉴定的平均覆盖度为16.33%。
The colony morphological characteristics of dominant microbes from dark tea fermentation were compared with three different media,and some protein properties of the microbes were analyzed with protein mass spectrometry.The results showed that the dominant microbe in the dark tea was Eurotium cristatum,which had different growth characteristics on three different solid media.The mycelia were different in color and the pigment was different,which reflected the dry resistant characteristics of the bacteria.The research of protein full spectrum showed that the special protein content reached 73.34%,the length of peptide fragment was mainly between 8 and 22,in which the length of 12 peptides was the most,the average length of peptide fragment was 15.0 5 and the average protein identification coverage degree was 16.33%.
