摘要
在乳品发酵中,噬菌体污染会造成极大的经济损失。该国内外乳酸菌噬菌体的侵染机制、分离技术及抗性菌株构建和选育等方面的研究进展进行了综述。
Bacteriophages infecting lactobacillus strains can cause great economic losing in dairy fermentations.This article concluded the isolation of bacteriophage,its incursion progresses,selection of anti-phage lactobacillus,and modern biotechnology and approaches on the research of anti-phage lactobacillus from recent researches.
