摘要 黄酒酒脚成分复杂,经测定瓶装黄酒酒脚含粗蛋白50.56%(其中高分子72.62%、中分子2.32%、低分子25.06%),糊精4.53%,还原糖14.70%,灰分6.73%,总多酚2.08%,粗纤维1.11%,铁0.268%,各组分含量与坛装黄酒酒脚有明显的差别。 The components of the precipitate in rice wine are complex.The precipitate in bottled rice wine was analysed and the re-sults showed that the components contents are as follow:protein50.56%,dextrine4.53%,reducing sugar14.70%,ash6.73%,iron0.268%,polyphenol2.08%,cellulose1.11%.Compared with the precipitate in earthen jar rice wine,the contents of above components are rather different.
