摘要
以紫云1号、S10-905、S10-499和S10-843四个品种彩色马铃薯为试材,采用正交试验优化马铃薯花青素超声提取工艺。结果表明,紫云1号马铃薯花青素提取的最优工艺为:超声功率400 W,乙醇浓度60%,提取时间120 min;S10-905马铃薯花青素提取的最优工艺为:超声功率400 W,乙醇浓度50%,提取时间90 min;S10-843马铃薯花青素提取的最优工艺为:超声功率500 W,乙醇浓度70%,提取时间90 min;S10-499马铃薯花青素提取的最优工艺为:超声功率400 W,乙醇浓度70%,提取时间45 min。由此可见,超声功率400 W,乙醇浓度70%是马铃薯花青素提取较好的水平,提取时间因马铃薯品种(系)不同而有所差异。
Four varieties of colour-potatoes, Ziyun^^^^-1, S10-905, S10-499 and S10-843 were used as materials to optimize the ultrasonic extraction process of potato anthocyanins by orthogonal test. The results showed that, the optimal extraction process of anthocyanin from Ziyun^^^^-1 was as follows: ultrasonic power 400 W, ethanol concentration60%, and extraction time 120 min. For S10-905: ultrasonic power 400 W, ethanol concentration 50%, and extraction time 90 min. For S10-499: ultrasonic power 500 W, ethanol concentration 70%, extraction time 90 min. For S10-843: ultrasonic power 400 W, ethanol concentration 70%, and extraction time 45 min. All the test data showed that, the ultrasonic power 400 W and ethanol concentration 70% were more effective for anthocyanins extraction,while the extraction time was variety-dependent.
