Kombucha is a kind of ferment product which is beneficial to the human body.It is produced by microorganism with sugar,tea and water.The ferment product is a kind of natural functional food which has rich nutrients and functional substances.summarizes the research progress of fermentation process,effective composition and product research for kombucha.
