摘要
以未过滤酒样为空白样,与经不同孔径超高分子量聚乙烯材质的微孔过滤片过滤过的固态法和固液法浓香型白酒进行对比,研究高分子过滤片孔径大小对固态法和固液法浓香型白酒香味组分的过滤影响。实验结果表明:不同孔径对比,0.1μm和0.2μm孔径的滤片分别对固态法和固液法浓香型白酒有最好的过滤效果,同一孔径对比发现该滤片对固态法白酒的过滤效果比固液法白酒好,初步猜测可能是固液法白酒中部分香味物质为外源添加的原因。
With unfiltered liquor as the blank sample,Compared with the luzhou-flavor liquor made from traditional fermentation and made from tradition and liquid fermentation,which was filtered by the microporous filter with different pore diameter and was made from ultra-high molecularweightpolyethylene,The influence ofpore diameterofpolymerfilteron the flavorcomposition ofliquor was studied.The experiment results show that:The filter of 0.1μm aperture is the best filter for Chinese spirits made from traditional fermentation and Chinese spirits made fromtradition and liquid fermentation liquor.The filteringeffectofthe filteron the solid state liquorwasbetterthan thatofsolid liquor.
