红曲色素的提取工艺比较研究及性质探讨 被引量:2

摘要 本实验采用两种提取方法从红曲米中提取红曲色素,以正交实验法确定提取的最佳工艺条件,并在最佳提取工艺条件下对其性质进行比较研究.实验结果表明,当提取剂为75%乙醇时,提取条件为料液比1∶8,80℃下提取2次,每次1.5 h时,红曲色素的光稳定较差,但抗氧化性及抗还原性以及热稳定性均较好;当提取剂改为丙酮,提取条件为料液比1∶6,50℃提取2次,每次1 h时,与水溶性组相比红曲色素的光稳定性、抗氧化性、抗还原性以及热稳定性均较差. Two extraction methods were used to extract Monascus pigment from red kojic rice. The optimum extraction conditions were determined by an orthogonal experiment, and the properties of Monascus pigment were compared under the optimum extraction conditions. When the extraction agent was 75% ethanol, the extraction conditions were as follows: the ratio of material to liquid was 1:8 at 80℃ for 2 times, each time for 1.5 hour, but the light stability of Monascus pigment was poor. However, the oxidation resistance, reduction resistance and thermal stability were good. When the extraction agent was changed to acetone, the extraction conditions were as follows: the ratio of solid to liquid was 1:6 at 50℃ for 2 times, each time for 1 hour and compared with the water-soluble group, Monascus pigment had poor photostability, antioxidation, anti-reduction and thermal stability.
