摘要
番茄红素营养价值极高,近年来市场需求不断增长,对于番茄红素的研究也得到了人们的关注.为了获得更加高效率低成本的提取工艺,试验采用乙酸乙酯浸提的方法,从新鲜番茄中提取番茄红素,以番茄红素提取率为评价指标,探究了料液比、浸提温度、浸提时间和浸提pH对番茄红素提取率的影响水平,在单因素试验的基础上,利用正交试验设计对工艺进行优化.得到番茄红素的最佳提取工艺为:料液比1∶3(g:m L),浸提温度50℃,提取时间5 h,浸提pH=4,在此条件下,番茄红素的提取率达到46.12 ug/g.
Lycopene has attracted extensive research interest due to its high nutritional value and in-creasingly rapid demands in recent years.In order to obtain an extraction process of lycopene with higherefficiency and lower cost,in this research,ethyl acetate was used to extract lycopene from fresh tomato.Material to liquid ratio,extraction temperature,extraction time and extraction pH were selected as extrac-tion parameter,and their effects on the extraction rate were researched.Simultaneously,on the basis of sin-gle factor experiments,orthogonal design was employed to optimize the extraction process of lycopene fromtomato,with the optimum extraction parameters as follows:material to ethyl acetate ratio of 1 ∶ 3 (g ∶ mL),5 h extraction time,50℃ extraction temperature and extraction pH value of 4,and base on it,the extrac-tion rate of 46.12 (ug / g) was obtained.
