摘要
我国是鸡蛋生产大国,鸡蛋富含人体所需的优良蛋白质。通过查阅国内外文献资料,对鸡蛋中蛋白质的种类、活性功能、分离提取方法及蛋白粉的制备等方面进行了综述,旨在为鸡蛋中蛋白质的后续相关深入研究和应用开发提供参考。
China is a large egg production country. The egg is rich in excellent needed protein for human body. The kind, active function, separating and extracting method and protein powder preparation of egg protein are reviewed by consulting literature information at home and abroad to provide a reference for further related research, application and development of egg protein.
