摘要
电子鼻是一种食品品质检测领域的创新测量系统,由于其具有快速、无损等优点,因此被应用于食品生产链早期污染和缺陷检测。电子鼻通过模仿哺乳动物嗅觉系统的主要构件来检测和识别复杂的气味。伴随着肉类食品在我国国民消费所占的比例越来越高,人们对肉类品质的要求也越来越高,研究人员已采用电子鼻对肉类新鲜度、肉类有害物质、肉类掺假等进行鉴别,研究结果表明电子鼻的准确识别率能达到87.5%以上。本文介绍了电子鼻的组成、工作原理和电子鼻技术在检测肉类新鲜度、肉类有害物质、肉类掺假问题的典型研究成果以及存在的问题,并提及了电子鼻的未来发展趋势和应用领域。
Electronic nose is an innovative measurement system in the field of food quality detection. It is applied to the early contamination and defect detection of food production chain due to its fast and non-destructive advantages. Electronic noses detect and recognize complex odors by mimicking the major building components of mammalian olfactory systems. Along with the increasing proportion of meat food in China's national consumption, people's requirements for meat quality are getting higher and higher. Researchers have used electronic noses to identify meat freshness, meat harmful substances and meat adulteration, etc. The results show that the accurate identification rate of electronic nose can reach more than 87.5%. This paper introduces the composition and working principle of electronic nose, and the typical research results and problems of electronic nose technology in the detection of meat freshness, meat harmful substances and meat adulteration. The future development trend and application field of electronic nose are also mentioned.
