摘要
为了解该市食源性致病菌污染状况,依据国家抽检实施细则和相关标准采集该市区多家超市、农贸市场和专卖店的市售食品进行沙门氏菌、志贺氏菌、金黄色葡萄球菌等食源性致病菌检测。抽取样品为三大类食品(蔬菜及蔬菜制品、薯类和膨化食品、肉及肉制品)共计60批次。研究发现该地区主要消费食品存在一定的食源性致病菌污染,建议相关部门加大对生产、流通、餐饮各环节的严格管理,尽量减少食源性致病菌的交叉污染,同时做好卫生知识的宣传教育工作,防止食源性疾病的发生。开展食源性致病菌监测对迅速发现或识别潜在危险因素,及时采取有效对策控制食源性疾病的爆发流行意义重大。
In order to understand the status of food-borne pathogenic bacteria in a city, this paper collects commercially available foods from a number of supermarkets, farmer's markets and specialty stores in the city and tests the foodborne pathogens such as salmonella, shigella and staphylococcus aureus according to the national regulations and related standards on sampling inspection. The samples are three categories of food (vegetables and vegetable products, potato and puffed food, meat and meat products) from a total of 60 batches. The study finding shows that there is some food-borne pathogenic bacteria in the main consuming foods in this area, and suggests that the relevant departments should step up strict management of production, distribution and catering, minimize the cross-contamination of foodborne pathogens and meanwhile promote publicity and education of health knowledge to prevent food-borne diseases. Conducting food-borne pathogen surveillance is of great importance in terms of the rapid onset or identification of potential risk factors and the timely adoption of effective countermeasures to control the outbreak of food-borne diseases.
