摘要
目的了解汉中市食品中沙门氏菌的污染状况,防止食源性疾病的发生,提高对食源性疾病的预警和控制能力。方法按照GB 4789.4-2010和国家食源性致病菌监测工作手册检验。比较不同监测点、不同种类和不同来源样品在检出率方面的差异。结果 2015-2016年汉中市5个监测点共检测7类样品285份,检出28株沙门氏菌,检出率为9.8%;宁强县沙门氏菌检出率最高(21.1%),各县检出率差异无统计学意义(χ~2=8.23,P>0.05)。7类样品中生禽肉、动物性海水水产品、动物性淡水水产品的检出率较高,分别为30.9%、30.0%、20.0%;生畜肉、熟肉制品和地方特色食品中也有检出,检出率分别为6.7%、3.3%、0.9%;流动早餐中未检出沙门氏菌,不同样品间沙门氏菌检出率差异有统计学意义(χ~2=49.43,P<0.05)。不同样品来源间沙门氏菌检出率差异无统计学意义(χ~2=3.07,P>0.05)。结论生禽肉、动物性海水水产品、动物性淡水水产品中是沙门氏菌污染的主要食品,由此造成的二次污染是食物中毒的隐患,应该引起足够重视。
Objective To explore food Salmonella contamination in Hanzhong,to prevent the occurrence of food-borne diseases and improve early warning and control of food-borne diseases. Methods The samples were detected according to GB4789. 4-2010 food microbiological examination: Salmonella and the National food-borne pathogenic bacteria monitoring workbook. The comparison of detective rate between different monitoring points, different kind and different sources were made. Results 285 food samples of seven types were collected from five areas during a period from 2015 to 2016 to monitor and analyze the presence of Salmonella,28 strains of Salmonella were detected. The overall detective rate of Salmonella was 9. 8%.The detective rates of Salmonella in Ningqiang was the highest( 21. 1%) of the five areas,and their specificity had not significant difference( χ~2= 8. 23,P 0. 05). Raw poultry meat,animal seawater aquatic product and animal freshwater aquatic products showed a high prevalence of 30. 9%,30. 0%,20. 0%. The detective rates of Salmonella in the samples of raw livestock meat,cooked meats and local specialty food were 6. 7%,3. 3%,0. 9%,respectively. Salmonella were not detected in flow breakfast. The difference of kind was significant( χ~2= 49. 43,P 0. 05). There was no significant difference in the detective rate of different sources( χ~2= 3. 07,P 0. 05). Conclusion The raw poultry meat,animal seawater aquatic product and animal freshwater aquatic products were the foods most frequently contaminated by Salmonella,so that the secondary contamination of food should be pay enough attention.
