摘要
介绍了电场、磁场辅助冻结-解冻技术的研究成果,对其作用机理进行了分析,并介绍了电磁场辅助冻结-解冻设备研发现状,展望了电磁场辅助冻结-解冻技术的应用前景,以期为食品冷冻保鲜提供参考借鉴。
This paper mainly introduces the research results of electric field and magnetic field assisted freezing- thawing technology, analyzes the mechanism and introduces the current research and development situation of elec- tromagnetic field assisted freezing-thawing equipments, prospects the application prospect of electromagnetic field assisted freezing-thawing technology, in order to provide technical references for food frozen preservation.
