河豚鱼的营养价值及副产物可利用性的研究现状 被引量:12

摘要 河豚鱼具有很高的利用价值。河豚鱼肉有高蛋白、低脂肪等特点,其含有多种必需氨基酸及矿物质元素,营养较为丰富;河豚鱼皮含有丰富的胶原蛋白,是优质的胶原蛋白原料来源;河豚鱼肝脏中含有丰富的不饱和脂肪酸,可以用于EPA和DHA的提取;河豚毒素(TTX)有很高的药用价值。文章对河豚鱼肉营养价值以及河豚鱼副产物鱼皮、肝、性腺及河豚毒素的可利用性做一综述,为进一步研究河豚鱼营养价值及河豚鱼副产物的综合利用做一参考。 Puffer fish has high ultilization value. Puffer fish is characterized by high protein and low fat, it contains many essential amino acids and mineral elements. Puffer fish skin contains abundant of collagen, which is the source of high quality collagen, The liver of puffer fish is rich in unsaturated fatty acids, can be extracted EPA and DHA. Tetrodotoxin (TTX) also has a high medicinal value. This article reviewed the nutrition value of puffer fish and the avilability of puffer fish by-products such as skin, liver, gonad and tetrodotoxin, in order to provide references for futher study of the nutrition value of puffer fish and the ultilization of puffer fish by-products.
