摘要
介绍酶联免疫检测分析方法(ELISA),并从食物中兽药残留、农药残留、病原微生物、生物毒素、转基因食品、过敏源等方面对ELISA在食品安全检测中的应用进行评述,阐述了ELISA在食品安全性检测中的应用前景。
The technology of Enzyme-Linked Immunosorbent Assay（ ELISA） was briefly introduced.Meanwhile, the application of ELISA in analysis of food safety was commented in details, including the determination of veterinary drug residues,pesticides residues,food microorganisms, food toxin, transgenic food and the allergy in food. Finally, the prospect of ELISA used in the food safety determination were also forward promoted.
